Got Milk? Pumpkin Chocolate Chip Pancakes

I love the holiday season. There’s nothing like the smell of pumpkin and fur trees to get me in the mood for the craziness that make up the holidays. Late nights baking with my kids and dreaming up new ways to cook my turkey make me wish that the weeks between Thanksgiving and Christmas were just a tad longer for me to enjoy.
In the midst of, one of our families favorite past times is Family Breakfast on Saturday mornings. Each Saturday we try a new recipe that always includes an egg dish, bacon and pancakes or waffles… pretty much anything that I can incorporate milk into. My family is not big on drinking milk, but I can’t live without it, so I’m always looking for ways to hide milk into my recipes. After all, milk fuels a better future and it makes you big and strong. Growing up drinking whole milk, I believe it’s a vital part of our families diet.
If you’re like me and you love finding new holiday recipes, especially ones that incorporate milk, then I’ve got a delicious recipe just for you: Pumpkin Chocolate Chip Pancakes. This recipes makes 12-16 pancakes and I’m not lying when I say there were no leftovers.
- 2 cups of all-purpose flour
- 2 teaspoons of baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 teaspoons of cinnamon
- 1 heaping teaspoon of pumpkin pie spice
- 1 cup of semi-sweet chocolate chips
- 1 ¼ cups pumpkin puree (canned or fresh)
- 1/3 cup of brown sugar
- 1 large egg
- 3 tablespoons of canola or vegetable oil
- 1 ½ cups of milk (preferable whole or 2% CA milk)
- Mix all your dry ingredients: flour, baking powder, baking soda, salt, cinnamon, pumpkin pie spice and brown sugar in a bowl
- In a separate bowl (I used my Kitchen Aid Mixer bowl), add all your wet ingredients: pumpkin puree, egg, canola oil and milk, and mix together well. I recommend using a Kitchen Aid mixer as it mixes all your ingredients together well.
- Slowly add your dry ingredients into your wet mix.
- Finally, add in your chocolate chips
- Heat a skillet on the stove. Make sure it’s very hot before you begin making your pancakes.
- I use a 1/3 hand measuring cup to scoop ingredients on to my skillet.
- Cook on one side until you see air bubbles begin to form on surface of side facing up, then turn over.
- Serve hot covered in butter and maple syrup
