Hi friends! I’m so excited to share this recipe idea with you all today! As it is just barely beginning to warm up, I have Spring and Summer on my brain. Which means I have ice cream in my mouth. Lucky for us, I have come up with a way to satisfy my ice cream craving and not feel too guilty.
I’m going to keep my rambling short and focus on the sweet…
What You Need
`6 frozen bananas
`splash of milk
`1 tsp vanilla
`1 cup blueberries
`2 tbs sugar
`2 sticks of butter (room temp)
`2 cups flour
`1 1/2 cup powdered sugar
`2 tsp vanilla
`pinch of salt
What You Do
`In a saucepan cook down the blueberries, sugar and water until plump. The liquid should be bright and the berries plump and juicy.
`Blend the blueberries into a puree.
`Use a mesh strainer to smooth the puree.
`Chill in the fridge.
Banana “Ice Cream”
For some scientific reason when frozen bananas are blended together they create an ice creamy texture. Just go with it and trick your brain!
`Chop and blend the bananas.
`Add a splash of milk and vanilla.
`Once smooth, place in a metal pan. Swirl with the blueberry puree and freeze over night!
Soft Shortbread Cookies
`Mix flour, salt, powdered sugar and butter.
`Add vanilla and water. Blend until a dough is formed.
`Chill for at least an hour.
`Once chilled, roll out and cut cookies.
`Bake for 12 minutes at 375 degrees.
Now…That may seem like a lot of steps but they are very easy. And delicious together!
